You can project a shadow onto a screen by putting a light on one side of the screen and put an opaque object between the light source and the screen.
To change the size of the shadow you bring the object closer to the light source.
You could use split pins to make arms or legs move, and you could use translucent coloured materials to change the colour of the light coming through onto the screen.
